Green Eggs and Ham (wraps)

Whether you’ve got children in school or still at home, you might be looking for some new lunch ideas. I mentioned before that I’ve been poking around and looking at sites that provide some different lunches beyond the basic “two slices of bread with lunch meat in the middle”.

And if I may digress for a second, the teachers were giving ideas at our information night and one said that a big hit was an inside-out sandwich - a breadstick in the middle with a slice of lunch meat and a slice of cheese wrapped around it. Cool!

Anyway, one that immediately intrigued me in my search was the Green Eggs and Ham sandwich. Green Eggs and Ham was always my favorite Dr. Seuss book to the point that I drove my mother insane by bringing it home from school every single week. My daughter agrees it sounds fun so we’ll give it a trial run this weekend and if it’s a hit I’ll send it to school with her.

-3 eggs
-1 ripe avocado
-2 green onions, finely chopped (I’ll likely omit these because she’s not a fan)
-2 tbsp mayonnaise
-Salt and pepper to taste

Hard boil, cool, and peel the eggs. Place them in a medium bowl. Cut the avocado in half, remove the stone, peel, then cut into chunks. Add to the eggs. Mash (with a masher or fork) the eggs and avocado to the preferred texture, either lumpy, smooth, or somewhere in between. Add the onions, mayo, and season with salt and pepper.

Spread it on a tortilla, top with a thin slice of ham, then roll up tightly. Wrap in plastic wrap. Makes four servings of green egg salad.

I think it sounds awesome. My husband is totally repulsed but he hates avocado so what does he know?

I can’t wait to try it!

    I hate avocado too so it does look icky but I had to say; I love all these posts you’ve been doing about scoring the perfect lunch for your girl. You seem like such a great mom :) Many parents I know just slap together whatever or do the hot lunch (blah).
