Cinnamon muffins
I’ve decided to use Fridays to post a recipe that is kid-friendly - either in the sense that it’s easy for them to help make it or in the sense that kids generally love it. In this week’s case both statements are true. Both my girls love to help make these tasty Cinnamon muffins. I hadn’t made them for awhile. However, we need to get some groceries, and as a result, we were missing something to send with my big girl for dessert at school today. She had a fruit cup to take for recess, but the only other thing we had was a box of granola bars - because there are nuts in them they’re a big no-no for the school cafeteria. They have a no junk policy (never mind that today is their monthly pizza day!) so I couldn’t send cookies. Thus, in desperation, I whipped up the muffins to send one with her. My little one helped pour things from the measuring cup into the bowls and my big girl helped stir it all together. They are fast, easy, and so delicious that, uh, I ate three of them at 10 pm last night. Oops!
Cinnamon muffins
Ingredients:
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger (I was out of ginger so I used nutmeg and it still tasted great)
1 egg, beaten
1/2 cup milk
1/3 cup vegetable oil
TOPPING
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup butter, melted
Mix flour, sugar, baking powder, salt, cinnamon and ginger. Mix the egg, milk and oil in another bowl, then stir into the dry ingredients to moisten. Spoon into greased or paper lined muffin cups (fill about halfway). Bake at 400 degrees for 20 minutes or until done.
For topping combine the sugar and cinnamon. Brush the tops of the warm muffins with butter and dip the top of muffin into sugar/cinnamon mixture.

Uh - YUM. And made with stuff I have around all the time - even better. Some chocolate chips in there might be darned good too. /me prints and drools ;)

I made these tonight, and I too ate three! They are VERY good!
