Friday Recipes - Super easy cookies
With Christmas eve rapidly approaching, many kids will be wanting to put out freshly baked cookies for Santa - and even if you don’t do the Santa thing or celebrate Christmas, there’s always a good reason for cookies!
If you’re a family that does a lot of holiday baking, you may already have a ton of cookies and can pick and choose what to leave out for Santa. My mother always made gingerbread men, almond raspberry jam cookies (heaven!), fruit jumbles, and sugar cookies, plus my two grandmothers had plenty of their own too, so I never had a shortage of selections for Santa.
However, if you’re not that into baking, there’s an alternative to store bought cookies or those Pillsbury cookies (which is what I’m doing because I love those things!). These are the fastest, easies cookies you will ever make and they’re quite tasty with a huge range of flavor options.
Cake Mix Cookies
- 2 eggs, beaten
- 1 package of any cake mix you like
- 1/2 cup vegetable oil
Preheat oven to 350 degrees. In a bowl, mix all three ingredients together. Shape into small (about 1-inch) balls and place on ungreased cookie sheets. Bake for 5-10 minutes.
Simple! I’ve made them with various chocolate cake mixes and once with a cherry chip mix and they all tasted great. Meanwhile, if you forget all about cookies until an hour before your child’s bedtime on the 24th, you can whip these up well before it’s even time to brush everyone’s teeth.
