Recipe Friday - Lunchtime sandwiches

With many of us preparing to send our kids back to post-holiday school next week, it’s time to start thinking about lunches. On the one hand, I kind of enjoy putting my daughter’s lunch together, though it can get monotonous at times. However, on the other hand, she’s pretty limited in the lunches she likes to take. Her favorite sandwich is the standard PB & J which is firmly off limits at the school due to peanut allergies. She will take bologna but only occasionally. Most often she takes a cold, hard boiled egg with some bread or crackers, and a vegetable like carrot sticks. She likes it but I’d like to expand her tastes a little. As it is, we get her one hot lunch per week to break it up a bit.

Then I found this table of sandwich ideas and I definitely want to see if we can try some of them out for her so that I can stop sending the same darn thing day in and day out. Of course, if it’s what she likes, that’s the most important thing but the more food I can get her to enjoy (in a no-pressure way, naturally), the better it will be for her overall health.
