Food Friday - A Valentine’s Day Dessert
Valentine’s Day is rapidly approaching (and we know that because stores have had the red hearts and cupid cutouts displayed since Boxing Day!). The funny thing about that day for me is that it wasn’t anything especially important to me as far as my relationship with my husband was concerned - partly because I don’t buy into the whole pressure to be romantic crap and partly because our anniversary is the 22nd so that was always more notable to me than the 14th.
However, growing up, my mom always made Valentine’s Day special. She would make a nice dinner, decorate the table, put out fancy candles, and my sister and I always got a few little gifts, usually a teddy bear of some sort and some chocolate. When we got a bit older we’d get something more age-appropriate like a CD or something along those lines.
I try tomake Valentine’s Day special for my kids too. I do simple things like cutting out toast in the shape of a heart and covering it with strawberry jam or using food coloring to make pink milk. My husband and I also get them a couple of little gifts like my parents did.
For some reason, I find Valentine’s Day more fun to celebrate with my children than I did before they were born.
This year, I want to make a special dessert for the big day - a Valentine’s Cookie Pizza. Here’s the recipe I got from a friend of mine:
* 1 (18 ounce) package refrigerated sugar cookie dough
* 1 (8 ounce) container frozen whipped topping, thawed
* 1/2 cup sliced banana
* 1/2 cup sliced fresh strawberries
* 1/2 cup crushed pineapple, drained
* 1/2 cup maraschino cherries
1. Preheat oven to 350 degrees F (175 degrees C).
2. Press cookie dough evenly into a 12 inch pizza pan. Bake in preheated oven for 15 to 20 minutes, until golden brown. Cool in pan on wire rack.
3. Spread whipped topping over cooled crust. Arrange fruit in a decorative pattern. Refrigerate until ready to serve.
It sounds yummy and it will be easy to make it fit the theme of the day, especially if I stir a bit of red food coloring into the whipped topping first.
